So NYTimes food section features plantains today...it's a great article about this retired janitor (named "Edwin") who invents a plantain peeler and turns it into a company. :)

I've cooked plantains a couple times but never felt the need for a special peeling tool!
maybe "edwins" are all generally useless and need special implements for all kinds of things...then again, this one did get a company out of it...mmmm
